Why Einkorn is a healthier choice:

Einkorn contains a simpler gluten structure than modern wheat, with just 14 chromosomes compared to modern wheat's 42, making it naturally easier to digest for many people who experience sensitivity to conventional wheat. While it does contain gluten and isn't suitable for those with coeliac disease, the gluten in Einkorn is weaker and less elastic. Einkorn also boasts significantly higher protein levels – up to 50% more protein than modern wheat – along with elevated levels of essential minerals like iron, zinc, and magnesium, plus higher concentrations of antioxidants. Unlike modern wheat varieties that have been heavily hybridised, Einkorn remains genetically unchanged, preserving the nutritional integrity that our ancestors relied upon for thousands of years.
